     La Casita is an original, family-owned business started from scratch in the summer of 2010. Before coming up with a name for our tiny restaurant on wheels we referred to it as la casita, Spanish for the little house.  When it was time to register our business, we simply used the name we had been calling it all along (without knowing there were a few other restaurants with similar names in the area).  Since then, we've been making a name for ourselves in the Denver area for our truly tasty, authentic Mexican food.  Although we do offer some Tex-Mex items which our customers love, like burritos and chips/salsa, we try to make our food as true to the Mexican experience as possible.  As one customer put it, "I just returned from Mexico and these tacos taste just like the ones I ate there!!!"  So far, we've been spreading the love of good food at local farmers' markets, festivals, breweries, and street fairs.  We cater small events such as parties, meetings, and weddings.  

     La Casita is not limited to serving Mexican dishes.  Francisco is an amazingly versatile chef with a degree in the culinary arts.  He has worked with some of the top chefs in the Denver area and specializes in a variety of cooking styles.  For example, he creates some truly delectable seafood plates, pastas, soups, salads, breakfast dishes, and desserts.  Francisco says there are a few different chefs along the way who convinced him that if the food has no flavor, there's no point in serving it.  But it all began with his mom who taught him how to cook con sabor (with flavor)!!!
